Watermelon Radish, Apple, & Celery Slaw

2 watermelon radishes
1 apple
3 stalks of celery
1/4 cup extra virgin olive oil
1/3 cup lime juice
1/4 cup maple syrup
3/4 tsp salt
2 tsp grated fresh onion
1/8 tsp coarsely ground black pepper
1/3 toasted coconut (optional)

Cut radishes, apple, and celery stalks into julienne (matchstick) slices.

Put remaining ingredients in a jar and shake it up.

Toss everything together in a bowl with enough dressing to coast. Remaining dressing can be stored in the fridge.

If desired, top with toasted coconut.
