Strawberry and Beet Salad


Discover how pairing strawberries with beets and balsamic vinegar can make a delicious savory salad. Recipe from Wyndellen’s Kitchen


  • 1 cup cooked red beets, peel, pat dried, and slice
  • 1 cup strawberries, rinse, pat dried, and slice
  • ¼ cup white or red balsamic vinegar, or more according to taste
  • 1 tablespoon of fresh herb, basil or cilantro, cut into chiffonade  (optional)
  • Any combination of greens for salad


  1. Place beets and strawberries in a salad bowl and toss with balsamic vinegar. A white balsamic vinegar will keep color of the strawberries clear and bright, a red balsamic will make the strawberries a bit ruddier.
  2. Add basil and let marinate for an hour before serving.
  3. Note: You can use a combination of bitter greens (kale, chicory), lettuce and cabbage underneath to complete the salad.
