Black Eyed Peas

Classic recipe to ring in the New Year with!


5 pieces of bacon cut into pieces
2 small onions diced
1 stalk of celery diced
1 pound of dried black-eyed peas
1 pound of smoked ham hocks or pork jowls
2 bay leaves


Cook the bacon in a large pot to render the fat. Then add the onion and celery and cook until the onions are translucent.

Add the black eyed peas and ham hock. Pour water to cover beans with 2 inches on top, add bay leaves. Bring to a boil.

Simmer for about two hours until beans are cooked and soft, but not falling apart.

Remove bay leaves. Pull meat from bone. Serve over rice and add hot sauce (if desired).
