The romanesco cauliflower, in all her dusky glory, captured another love slave this week.
Lauren, whose delight in the CSA knows no bounds, gave an ecstatic report of her experience with romanesco in the altogether. Says Lauren,
“We have discovered that Romanesco is AMAZING raw, especially when paired with tahini dressing and/or any kind of soft, creamy white cheese (like havarti, fontina or cumin goat cheese from the market!) ITS ORGASMIC!”
I’ll have what she’s having.

Two Easy Tahini Dressings
1/3 cup well-stirred tahini (Middle Eastern sesame paste)
1/3 cup water
1/4 cup plus 1 tablespoon fresh lemon juice
2 garlic cloves, chopped
3/4 teaspoon salt
1/4 teaspoon sugar (optional)
Blend all ingredients until smooth.
3/4 cup tahini
juice of 1 lemon
garlic to your taste
tbsp. or so ginger powder
1/2 cup olive oil
about 1/4 cup apple juice
